Damon DeVito is managing director at Affinity Management, a Virginia company that manages golf courses and country clubs. He spoke with Buck June 15 about his company's adoption of the bokashi method for handling food waste. Affinity manages Ferncroft Country Club, the first country club in the U.S. to implement a Zero Food Waste Initiative using the bokashi process. In just a year they've diverted several tons of food from the waste stream, saved money, used the byproducts to fertilize gardens and more.
